AUTOMATIC PASTA COOKER – DOUGH O MAT
The Nilma Dough O Mat ensures that pasta is cooked to perfection by, controlling the temperature to avoid wasting starch and gluten. The automatic pasta cooker can also be programmed to stir the pasta type at the appropriate speed so that it is homogeneously cooked. It also has a lid to enable the temperature to be kept consistent. The Dough O Mat pasta cooker cooks all pasta types, including tortellini and gnocchi. The Nilma automatic pasta cooker is fully automatic. It helps to improve the quality of the cooked pasta and makes for a more efficient working environment. The following models are available: Dough O Mat C40, Dough O Mat C40/2, Dough O Mat C80, Dough O Mat C80/2 – all of these are available with or without mixing. TILTING BOILING PAN WITH MIXER – MIX-MATIC
The Nilma Mix-Matic works as a traditional boiling pan, providing reliability and great tasting cooked ingredients, such as soups, rice, sauces, porridges, custards, etc. It reduces the need for constant inspections and interventions as the mixing arms continuously amalgamate the ingredients, ensuring the heavier produce is not left on the bottom. The Nilma Mix-Matic has an automatic control to set the cooking temperature, a very important feature, especially for the preparation of soups and creams. The automatic mixer blends the ingredients added during the cooking process. After cooking the product is quickly and conveniently poured through the automatic tilting of the pan. The Nilma Mix-Matic improves time saving, reduces labour, reduces energy costs and provides a safe operation, producing quality cooking.

AUTOMATIC BATCH FRYER – FS
The automatic batch fryer has been designed to consider gastronomic and dietetic requirements for businesses that need to fry large capacities. The Nilma FS increases the hygiene of the food through reduced manual contact, it also has the ability to fry thoroughly and at speed. The Nilma FS has special runners, and at the end is a trolley collecting the product. When the frying time is complete, controlled by a timer, the basket containing the product automatically lifts up. By moving it alongside the upper runners, the product can be unloaded into the trolley by opening the bottom of the basket. The Nilma FS is ideal for the caterer due to the high frying capacity vat, which holds 80 litres. STEAM AND CONVENTIONAL OVEN - KONVECTIO-STEAM
The Nilma Konvectio-Steam provides two innovative methods, convectional and steam cooking, hence this one oven will cook food simultaneously or separately through steaming, roasting or grilling. Advantages of the steam and conventional oven are improved food flavour, increased yield of product (less loss of weight), higher productivity within a small space, increased costs saving, reduced heating times and easy cleaning. The oven will also encourage the rational handling of the product, due to the grid rack trolley, which would also fit in to the Nilma Quick Frost Chiller with ease.

AUTOMATIC STEAMING OVEN WITHOUT PRESSURE - MINI-STEAM
The Nilma Mini-Steam, is a steaming oven which cooks without air in the oven pressure. The Nilma Mini-Steam uses the thermodynamic convection of the steam it produces, resulting in no oxidation and no condensation soaked food. Consequently products, such as, green vegetables, meat, fish and eggs preserve their principal nutrients. By using this oven cooking times are reduced by 30-40% compared with cooking in water. The Nilma Mini-Steam will reduce labour time as it is fully automatic and completely independent of the operator. There is a heat recovery system, which saves energy and maintenance; it is always ready for use. To summarise the Nilma Mini-Steam is economical, efficient and improves food quality. The following models are available: Mini-steam GN 1 / 2 and Mini-Steam GN 1/1.

The Nilma KSP40 is a pass through combi-oven, it has a dual-through-door, which allows the ‘loading’ of products in the cooking area and the ‘exiting’ in the chill/distribution area. The combi-oven is placed between the split cook and chill areas, hence helping meet hygiene standards and the HACCP system. The KSP40 can quickly heat up foods from a cold store to distribution temperatures, with minimum weight loss effects. It also is able to cater to large volumes, it has a 20 GN 2/1-container capacity. The combined convection steam oven provides versatility, reliability, performance, uniform cooking and safer handling within a large-scale production environment.

UNIVERSAL COOKER WITH MIXER - MIX-MATIC 250/500S
The reliable Nilma Mix-Matic is ideal for making sauces, soups, mince, ragus and other recipes with little intervention, it is possible to achieve the same cooking results typically obtained by using kettles, boiling pans and braising pans.
The Mix-Matic is fully programmable and provides homogeneous cooking. The mixing arm can be programmed for continuous or altered operation with the speed adjustable according to the recipe used. The cooker’s hemispherical bottom and automatic mixing system ensure set mixing of the product during cooking. The automatic mixing prevents the heavier ingredients from falling to the bottom. The temperature to be adjusted and set from very low up to a maximum of 165°C. Once the food is cooked then the Mix-Matic allows safe pouring through a special valve or by automatic tilting of the cooker. The cooker is easy to clean and extremely sturdy. The Mix-Matic can be equipped with a HACCP control and cooling system.

The Nilma Starline is a modular cantilevered kitchen that is extremely functional and aims to facilitate smooth working and reduced physical effort to those cooking. The work surface 90cm high, the ideal ergonomic height for working. The sloping front panel allows for ease of reading, holding and maneuvering the control buttons. Along with high performance, the Nilma Starline also offers a high level of safety, as the deep-fat fryers are equipped with an electronic device for controlling the temperature of the oil, also the braising pans have a specially shaped waste pipe, which avoids dangerous leakages of the product and reduces risks.
